The food trends we spotted at SIAL

We walked the floor this year with one question: what keeps coming up, stand after stand, country after country. A few themes were impossible to miss.
Heat keeps climbing
Spicy has been trending for a while, and it's still going. Not just hot sauce on its own, but heat inside chocolate, heat inside gummies, heat inside everything. Brands are chasing a burn that still tastes like something, not just pure pain.

Comfort meets strange
The other big one is nostalgia with a twist. Familiar shapes, weird flavours. A chip that tastes like a Sunday roast. A candy shaped like a mushroom. People want something new, but they want it wrapped in something they recognise.
Snacks as an experience
More brands are selling the moment, not the product. Packaging you keep, tasting rituals, stuff made to be shared and filmed. It's less about hunger and more about story. That idea is basically the whole reason a gift box works.
What we took home
We don't chase every trend. We look for the ones that will still feel fun in a year, not the ones that burn out by spring. Some of what we saw will fizzle. A few things are already on our shortlist. If you want to see where our taste lands, check the blog as we roll them out.

New year gift boxes to start the year

Taste vs flavour: they are not the same
Taste is just five things. Flavour is everything else your brain adds on top. Here is why that difference matters when you snack.
