Century Eggs
Preserved duck eggs. The white cures to amber jelly and the yolk goes creamy green. Salty, funky, and far better than it looks.
Century eggs are duck eggs preserved in ash, salt, and time until the white turns translucent amber and the yolk goes deep green and creamy. They look alarming. They taste like concentrated, funky, rich egg.
You eat them in thin slices with congee or rice, and they're the single best test of whether someone is actually adventurous or just claims to be. Served right, they're wonderful. Served to the wrong person, they're a party trick.
